I am having to face more surgery sometime in the near future.  The screw in the plate in my neck at C7 has worked itself loose.  Waiting to hear from the surgeon as to how to handle this revolting development.  I really love the first quote.

It's Already May. Cottage Cheese and Spinach Crustles Quiche

Cottage Cheese & Spinach Crustless Quiche
🥤 Ingredients
1 cup cottage cheese
1 cup shredded mozzarella cheese
4 large eggs
¼ cup milk
2 cups fresh spinach (chopped)
Salt and black pepper (to taste)
Optional: garlic powder, onion powder, or dried herbs
🧑‍🍳 Instructions
Preheat oven to 375°F (190°C).
Lightly grease a pie dish or small baking dish.
In a large bowl, whisk the eggs and milk until smooth.
Stir in cottage cheese and shredded mozzarella.
Fold in chopped spinach and season with salt, pepper, and any herbs you like.
Pour the mixture into the prepared dish.
Bake for 35–40 minutes, or until the center is set and the top is golden.
Let it cool for 5–10 minutes before slicing.
🍽️ Tips
For extra flavor, sauté the spinach briefly to remove excess moisture.
Add mushrooms, onions, or bell peppers for variety.
Store leftovers in the fridge for up to 3 days.

I colored eggs yesterday.  I love coloring eggs.  I should have put them in a decorative basket and staged them but you know, it is just me in the house, and I was getting ready to put them in the refrigerator so snapped this picture.

I drove today for the first time in over 2 months.  Lordy, this physical crap is getting really old.  I have a CT tomorrow afternoon to see how the fractures in my facial bones are doing.  Fingers crossed......
